The national flag is a tricolor of green, white, and orange. The tricolor is rectangular in shape, the width being twice the depth. The tree colors are of equal size, vertically disposed, and the green is displayed next to the staff.  The flag was first introduced by Thomas Francis Meagher during the revolutionary year of 1848 as an emblem of the Young Ireland movement.

 The green represents the older Gaelic and Anglo-Norman element in the population, while the orange represents the Protestant planter stock, supporters of William of Orange.  The meaning of the white was well expressed by Meagher when he introduced the flag. “The white in the center signifies a lasting truce between the' Orange’ and the ‘Green’ and I trust that beneath its folds the hands of the Irish Protestant and the Irish Catholic may be clasped in heroic brotherhood.”

 It was not until the Rising of 1916, when it was raised above the General Post Office in Dublin, that the tricolor came to be regarded as the national flag.  It rapidly gained precedence over any flag that had existed before, and its use as a national flag is also stated in the constitution.

A Wee Taste Of Ireland

 

Irish Coffee

 

1/4 cup hot, strong, black coffee
1-2 tsp sugar
I large measure Irish whiskey
1-2 tbsp double cream

Fill a stemmed whiskey glass with hot water then throw out, refilling it with boiling water. Throw this out, fill the glass somewhat more than half full with coffee and add sugar to taste. Stir to dissolve, then add the whiskey. Pour the cream over the back of a spoon to float on top. Drink the hot liquid through the cool cream. If double cream is not available use lightly-whipped single (whipping) cream. Hot Whiskey, also known as 'hot Irish' or just 'punch', is a favorite winter drink in Irish pubs.

Dublin Lobster

1 live lobster, about 2 lb
1/2 cup butter
1/2 cup Irish whiskey
1/2 cup whipping cream
salt and pepper
(serves two)

Toss the lobster meat in foaming butter over a medium heat for a few minutes until cooked. Take care that the butter does not burn. Add the whiskey and when it has heated up set light to it. Pour in the cream, heat through and season.

Serve in the half shells with plainly boiled fine beans

Corned Beef And Cabbage

( Will Serve Six )

5 lb/ 2 kg joint of corned beef
1 large cabbage
bay leaf
2 large onions
cold water to cover
2 large carrots
ground black pepper
4 potatoes

Quarter the cabbage and put aside. Peel and slice the other vegetables. Cover the meat with the water and bring to the boil. Skim the surface, add the vegetables (except the cabbage), the bay leaf and the pepper and simmer gently for 20 minutes. Add the cabbage and cook for a further 30 minutes. Serve the meat surrounded by the vegetables with additional mashed potatoes

The Claddagh is part of Ireland's unique heritage. The two hands holding a crowned heart is a symbol of Love, Friendship, and Loyalty. This Irish symbol was crafted by Master Goldsmith, Richard Joyce who lived in a fishing village called "Claddagh" overlooking Galway Bay.
The ring worn on the right hand, crown turned inward, tells that your heart is yet unoccupied. Worn with the crown turned outwards reveals love is being considered. When worn on the left hand, the crown turned outwards shows all that your heart is truly spoken for.
